With lightness and finesse, the streams of delicate bubbles rise through the glass, reflecting hints of green and of gold.
The aromas gently reveal lime flowers and lemon balm mingled with notes of bitter oranges and of quince. Freshness and elegance are confirmed on the palate. The dominant notes of citrus fruits combine with white peaches and raisins.

A fine mousse and a lively stream of delicate bubbles dance together against a yellow green background. A panel of aromas come together to form a broad bouquet; first grapefruit then quince mingle with aniseed and fennel, and evolve into richer, spicy notes of pepper, clove and cinnamon.
On the palate flavours of almond, of toast, and then notes of vanilla and of butter, combine to soften the minerality of this fine blend. The final balance is brought into perfect equilibrium by the long and complex finish.

Swathed in ruby silks, a fine stream of delicate bubbles rises to envelop Tsarine Rosé. By an almost magic alchemy, the aromas of wild strawberries, of wheat and
of blackcurrant buds awaken our instinctive senses.
In the mouth, body and finesse combine languidly overnotes of berry fruits and of cream. Pleasure and gentleness form a single whole.
On the 6th of April 2003, the temperature at daybreak is -6 C in La C te des Blancs , soil of the Grands Crus de Chardonnay : the majority of the emerging buds are destroyed by this hoar frost of spring. The volume of harvest is, at this stage, already strongly compromised. On August 6th, 2003, France chokes under the heat wave and the thermometer reaches 39.5 C in the shade of Epernay. The 2003 vintage knows all superlatives. However, in the storm, Champagne Chanoine chooses only the best grapes from the bad ones, and insulates a jewel: since decades, the Grands Crus de Chardonnay have never known such a concentration of quality. Few houses produce Blanc de Blancs that year, because quality grapes are rare, partially destroyed by the frostbite of April, or scalded by the sirocco of August. Nevertheless, the result is worth the patience and the stubbornness of the winemakers. Under a limpid and pure robe, one guesses a fine and flexible foam. The nose, initially discrete, opens up on floral flavors of lemongrass and bergamot. The freshness is announced by astonishing notes of mint. The mouth surprises, astonishes by its uprightness and its freshness. The mineral universe comes along with spiced cinnamon notes, followed by a long and harmonious prolongation, completing the work of time.

Such nectar is produced only in years of perfect ripeness in a limited quantity. The final blend, nearing absolute perfection, is born from imagination, from spontaneity, but also from endless patience.
The nose opens up with fragrances of blackcurrant, pastry, and enhances the finesse on the palate, like the glistening purity of the morning dew. The 2003 harvest was distinguished by the excellence and the equilibrium of its perfectly ripened grapes.
During the creation of the Tsarine Rosé 2003, bottled in June 2004, we retained a new option leaving the beautiful share to the Pinot Noir, which was vinified separately; white then Rosé and red followed by the assembly.

Les Riceys, far south of the Champagne region provided, in 2003, grapes of an incredible concentration and maturity.
While Boursault, north-exposed in the Marne Valley, better protected from the heat wave of the summer 2003, produced grapes gorged with fruit and smoothness. Blend:
